Mustard Honey (Sarson Shahad) comes from bees that forage almost exclusively on blooming mustard (sarson) fields during the winter flowering season across Haryana, Punjab and Rajasthan. This single-flower (monofloral) origin gives the honey its distinct character — a thick, off-white to golden body, a warm and slightly sharp-sweet flavour, and one of the fastest natural crystallisation rates of any honey variety.
We work directly with local beekeepers, extracting the honey from the comb and simply straining it through a coarse sieve to remove wax and debris — nothing else. 🤔 Why Is My Honey Solid / Crystallised? Is It Adulterated?
No — crystallisation is proof of purity, not a defect. Mustard nectar is naturally very high in glucose relative to fructose. Glucose has low solubility in water, so as raw honey rests, the glucose molecules separate out and form fine crystals — turning the honey thick, semi-solid, almost like soft ghee, within days to a few weeks of extraction.
This is a common misconception in India: many buyers assume crystallised honey is fake or "sugar honey," when the opposite is true. Commercially processed honey is heated and ultra-filtered specifically to prevent crystallisation and stay liquid on the shelf for years — a process that also strips out pollen, enzymes, and aroma. Genuine raw mustard honey simply cannot stay liquid for long; that's the nature of the flower it comes from.
